🥣 The Recipe: Grandma’s Lentil & Vegetable Soup
Ingredients
1 cup green or brown lentils
1 onion, finely chopped
2 carrots, diced
2 celery stalks, diced
2 garlic cloves, minced
1 tomato, chopped (or 1 tbsp tomato paste)
1 tsp cumin
1 tsp turmeric
2 tbsp olive oil
6 cups water or vegetable broth
Salt & pepper to taste
Fresh parsley for garnish
Instructions
1. Heat olive oil in a large pot. Add onion, garlic, carrots, and celery. Cook until soft and fragrant.
2. Add lentils, tomato, and spices. Stir for 2 minutes.
3. Pour in the broth, cover the pot, and simmer for 30–40 minutes until the lentils are tender.
4. Season with salt and pepper. Garnish with fresh parsley before serving.
Serve it hot with warm bread, and you will understand why families cherished this dish for generations.
