Preparation of gelatin:
If using gelatin sheets, soak them in cold water for 10 minutes.
If you are using agar-agar, it is used directly in the hot liquid.
Heat the orange juice in a saucepan with the sugar (if using) until boiling.
For the agar-agar: add it to the boiling juice, mix well and let it boil for 2 minutes.
For the gelatin: squeeze it out and add it to the hot juice off the heat, mix until completely dissolved.
Pour a thin layer of the jellied juice into a ring mold or charlotte mold. Let it set in the refrigerator for 10-15 minutes.
Arrange the freshly cut fruit on the partially set jelly layer.
Pour the remaining gelled juice over the fruit gently.
Refrigerate for at least 4 hours, or until the jelly is set.
Carefully unmold and decorate with mint leaves before serving.
🍽️Trick :
For an even more indulgent dessert, serve with a spoonful of whipped cream or a red fruit coulis.
