How I prepare it
First thing: drain the mozzarella well. If using buffalo mozzarella, pat it dry with paper towels to keep the marinade from becoming watery.
In a large bowl (so you can stir them without spilling them), add plenty of extra virgin olive oil, the thinly sliced garlic clove, torn basil, chopped parsley, oregano, sun-dried tomatoes, and—if you like—chili pepper. Season with salt and pepper to taste.
Mix everything together, then add the mozzarella and stir gently, as if you were caressing it. We don’t want to break them.
Cover them with cling film and leave them in the fridge for at least 2 hours… but if you resist until the evening or the next day, it will be worth it.
How to serve it
I serve them cold, with a little marinade on top and maybe some wholemeal toast on the side.
They’re also perfect in a piadina or mixed salad. Oh, and be careful: everyone will want the sauce at the end to mop up the sauce.
And nothing… this isn’t a recipe, it’s a good and healthy vice.
