Step-by-Step Instructions
Step 1: Prepare Your Ingredients
Start by washing and chopping your tomatoes and onions. If using fresh tomatoes, you may want to blanch them in hot water for a minute to make peeling easier. After chopping, set the ingredients aside.
Step 2: Cook the Base
In a large pot or saucepan, combine the chopped tomatoes, onions, minced garlic, and grated ginger. Place the pot over medium heat and bring the mixture to a simmer. Stir occasionally to prevent sticking.
Step 3: Add the Seasonings
Once the tomato mixture is simmering, add the sugar, vinegar, mustard seeds, ground cumin, ground coriander, chili powder, and salt. Stir well to combine all the ingredients. The sugar will help to balance the acidity of the tomatoes and vinegar, creating a deliciously sweet and tangy flavor.
Step 4: Simmer
Continue to simmer the chutney on low heat for about 30-40 minutes. Stir occasionally, allowing the flavors to meld together. The chutney should thicken as it cooks. If it becomes too thick, you can add a splash of water to reach your desired consistency.
Step 5: Taste and Adjust
Once the chutney has thickened, taste it and adjust the seasoning if necessary. You can add more sugar for sweetness or more vinegar for tanginess, depending on your preference.
Step 6: Jar It Up
Once youâre satisfied with the taste and texture, remove the pot from the heat. Let the chutney cool slightly before transferring it into sterilized jars. Allow it to cool completely at room temperature before sealing the jars.
